Microwave Baked Apples with Granola

Ingredient List
- 2 large eating apples, such as Braeburn, Gala or Fuji, halved and cored
- 40 g sweetened dried cranberries
- 2 tablespoons soft light brown sugar
- 15 g unsalted butter, softened
- 2 Nature Valley™ Crunchy Oats & Honey Snack Bars, crushed
- Natural yogurt or light crème fraîche, to serve (optional)
Preparation
- Arrange the apple halves, cut-side up, in a shallow microwaveable dish. If needed, cut a thin slice from the base of each apple half to stop them from tipping.
- Mix together the cranberries and sugar and spoon into the centres of the apple halves. Dot with butter. Cover with cling film, folding back one edge to allow the steam to escape.
- Microwave on high for 5-6 minutes (timing will depend on the wattage of the microwave) until the apples are just tender. Sprinkle over the crushed granola. Serve immediately with natural yogurt or crème fraîche, if liked.
Tips
- Try halved pears instead of the apples, if preferred.
- Use a spoon to scoop out the cores and make a deep enough indentation in each apple half for the fruit and granola filling.
